PHOTO A DAY CHALLENGE: OCTOBER 2012

The end of the month is here! I have really enjoyed doing the photo a day challenge. It's fun to take a random photo using Instagram everyday. I don't feel like all my photos were super creative or anything, but I still loved doing it. It was fun to see what other people took photos of also. Before I got my Iphone and started taking all these Instagram photos, I had read a blog post about advise on how to take your pictures using Instagram. The advise was to only use ONE filter for every picture ALL the time. At first I thought this sounded like a great idea. Once I started taking photos though, I found it silly and almost impossible! So, with that said here is my photos for everyday in the month of October, using many different filters!

I can't believe another month is gone! I know we all say that at the end of every month,...but I really mean it! What happened? It's like I blinked and October was over! October was a good month for me though! Check out what I did...

DISNEY VACATION: EPCOT

This Disney vacation post will feature EPCOT. A lot of people LOVE Epcot. For me, it's my least favorite park. Sorry to those who love it. I don't have as many photos for this blog post. We only went to Epcot once. In my opinion Epcot is great the first time you go and it's great for people who want to eat some neat food while you are at Disney. The World Showcase at Disney offers all kinds of food from different countries. I am going to feature the things that I enjoy about Epcot in this post.


When you first walk into the park it is neat to snap some photos of the big Epcot ball. The correct name is Spaceship Earth. It is an actual ride, so yes you can go inside the big round thing. I have actually never done it. The first time we went to Disney we flew and on the plane I could see the Epcot ball below on the ground. That was pretty exciting! I also love seeing the Trams run through the park...

I do enjoy the scenery at Epcot. It's wonderful to photograph. They have a flower show in the springtime. I haven't been yet, but think that's the time of year I will plan my next Disney vacation for. I couldn't imagine all the beautiful flowers I could take photos of! I'd probably explode actually.


Epcot is a good place to go when you kinda want to relax and get away from the crowds. One draw back for us though is when you enter the back of the park where the world showcase area is, lots of people are pretty drunk. You can almost instantly tell a difference in the way people are acting, walking and talking. If you like to drink it probably wouldn't both you. ;) I am sorry I don't have any photos of the world showcase to share. We walked through very quickly hoping to find soy latte's, no luck. I recommend going early in the morning before everyone starts drinking.


There are many beautiful fountains at the park, making it a rather peaceful. They have The Land Pavilion which is a nice area geared towards saving the environment. One of my favorite things was the film Circle of Life. I highly recommend it. Then we did the Living with the Land ride, pictured below...


You ride on a boat and it takes you through the Disney greenhouse area. Showing you how they are growing produce for some of their restaurants at the park. They are trying to spread awareness about better ways to farm that are healthy and better for our planet. It was really neat. Another thing I like about Epcot is the aquarium area that they have. It's actually a Finding Nemo ride that you get on and then after the ride ends you walk around and look at fish.


They do have a few Dolphins there, which breaks my heart. I hate seeing them in captivity. I actually was so upset that I had to walk away. It's amazing how an animal can touch my heart so much. On a happier note, I really enjoyed seeing this many clown fish together in one place...

Of course you should always try on silly hats while on vacation at Disney...
Another highlight for me at Epcot was getting my picture taken with Alice! If you missed that post, you can see it HERE. So if you want your photo taken with her, she's at Epcot in the Great Britain area. There is also a building that has lots of character greetings. Great place to get your photo taken with Mickey and Minnie! The ride Soarin' is supposed to be really good. I haven't done it yet because the line is always really long, so get a Fastpass for that!! I like that we haven't done everything yet. Gives us stuff to look forward to next time. :)

Fashion Inspiration: Emma Watson

Months ago I did some fashion inspiration boards for Gwen Stefani and Marilyn Monroe. I really enjoyed making them, so I wanted to make some more. I chose Emma Watson as my inspiration this time. Every time I see her she looks so adorable. She is so naturally pretty and can pull off anything! I found some stuff around the web that reminded me of her style...

Recipe: Vegan Pizza!

How can you be Vegan and eat pizza? It has cheese and meat? Not in my recipe! We eat this pizza more often then I'd like to admit here on the blog! ;) It's so yummy and I really wanted to share it with you!

We prefer loading our pizza up with mushrooms, black olives, vegan pepperoni and green bell peppers!
Needless to say you can choose whatever you want for your toppings! I do have the original longer version of this pizza recipe HERE. Over time we have changed the recipe to what works best for us! The main change that makes this pizza way easier to fix is buying a store bought pizza crust. We only buy "healthier" crusts that have very little oil and fat. Below is a photo of the ingredients that we use. I did forget to include garlic in the photo...


The first thing you are going to have to do is start making your tomato (pizza) sauce. I suppose you could cheat and buy store bought, but homemade tastes better and is healthier for you.

Ingredients for the tomato sauce:
1 pound heirloom tomatoes
Sea salt
6 to 8 garlic cloves
Fresh herbs, such as basil, chives, oregano or sage

Making the tomato sauce: Preheat the oven to 350 degrees. Quarter the heirloom tomatoes and place faceup on a roasting pan. Sprinkle with sea salt. Add the whole cloves of garlic and roast for 30 minutes or until lightly caramelized. When they are finished scrape the roasted tomatoes and garlic into a bowl and pulse with an immersion blender. (We use a food processor.) Chop some of your favorite herbs and stir-in sauce. We always used our jars of herbs.

Tomatoes and Garlic in the food processor, add herbs also.
Now make the sauce!
Let's not forget my favorite part, the cashew sauce that replaces cheese on the pizza!
Herbed Cashew "Cheese" Sauce:
1 cup organic oil free cashews
1/2 lemon juiced
1 teaspoon sea salt
1 teaspoon fresh basil or your favorite herb
1/4 cup water

Making the cashew "cheese": Put all "cheese" ingredients into a food processor and puree, adding water slowly, until it reaches a thick, cream-cheese-like consistency.

Don't forget to chop up your veggies!!!
Now it's time to assemble your pizza!

Time to put the sauce on your crust


Add all your toppings

Get caught eating toppings....


Bake accorindly to your pizza crust directions. Usually 10 minutes.

We cut ours into 4 slices!

Biking in The Cooler Weather

Over the weekend we had fairly nice weather for Wyoming. The sun came out and the wind wasn't extremely bad. There were strong gusts at times. One of the jokes in the cycling community is that, "You train with the wind"! Well it's a joke for a reason because biking in the wind is VERY hard. The cool air made my lungs burn for the first time while riding. That sucked. I also rode without my Camelback of water for the very first time. It was nice not to have all that weight on me, but it met less water. I am still having trouble breathing through my nose and NOT my mouth. (Probably why my lungs were burning.)

We stopped so I could snap a few photos.

The scenery has changed a lot on the bike trail since we last biked it in early September.

We decided to bike to Barnes & Noble, which we do often. The bike trail runs behind a strip of stores in town. We got some coffee and took a break since my lungs were on fire. I browsed through some kitchen design magazines for more inspiration and ideas. Of course I always have to check out the Jonathan Adler stuff also...


The main reason we went to Barnes & Nobles was so Cody could buy The Hobbit.
He wanted to read the book before the movie comes out in December.


I can't explain the happiness I feel when I am on my bike. I have grown so attached to my bike and the sport it's self. It was the first time I felt at peace and happy since we got back from our vacation. It just feels right to be out there peddling. We really hope to buy a house that is close to the trail and bike to the grocery store, shopping and work next year. I can see myself leaving the car in the garage a lot.

It felt so good to be out doing something. Biking again was one of my Simple Goals Before 2013! To be more exact, it was to bike some hills. Well there were a few hills, one of the biggest I had done yet! I thought I was going to die. It felt like it was miles long and would never end. I pushed through it though with the wind in my face. Climbing to the top of the Rocky Mountain Summit on my bike next year is a huge goal of mine. I don't ever like to say that I CAN'T do something, but man it's going to be hard. If others can do it, so can I!
The Children's Village

There isn't a lot that I like about my city, but I will give them credit for the awesome bike trail and parks. They have a big huge park that also has it's own Children's Village area. It's so beautiful and fun. I can't wait to take my kid here someday. It's very EARTH FRIENDLY and teaches children (and adults) all types of ways to be nice to the environment. There are gardens, windmills and all types of water features. They have painting classes for kids and all kinds of activities for families. I will be here a lot over the next few years while living in Wyoming. :)

When ever I am down or feel the world is falling apart I remember it. Sadly I lost a friendship a few months ago. I was defending my Vegan diet and arguing about saving the environment. They decided to stop talking to me. Something they said shook my soul. They said that one person can't make a difference and even if we all changed it wouldn't be enough. I am glad they aren't in my life anymore. I can't be close friends with someone who has such a negative attitude. It just brings you down. Like I always say, You can choose to be part of the solution or part of the problem. I know which side I'm on. ;)

Hi, My name is Jessie and I'm addicted to Pinterest. My decorating wheels are turning and NON-stop recently. I'm laying awake at night dreaming of painting walls in a house that I don't even own yet. Yes, it's a sickness I think and Pinterest just makes it worse!!! (If you missed my post about us buying a house last week you can read that HERE.) This week I wanted to focus on some of my favorite pins that are Interior Design related. Mostly inspiration things for the home I don't have yet....

Using Pinterest for decorating ideas is very important to me because my tastes have changed a lot. I used to only like white furniture and ultra modern things. I find myself more and more drawn to wood pieces and a mixture of antiques. I know I am going to start collecting tons of globes!!! Now that I will have more room for them. Pinterest is really helping me to see what colors I am drawn to the most. Here is another board, because one is not enough!

DISNEY VACATION: HOLLYWOOD STUDIOS

Be prepared to see a lot of pictures! I liked so many that it was hard for me to narrow it down. I am sure I took over 2000 pictures on our vacation at Disney World!

For my second Disney post, I wanted to feature Hollywood Studios! We love this park and it was the first place we went. During this trip to Disney we found that most days Magic Kingdom was very busy. We are not a fan of huge crowds so we did spend a lot of time at Hollywood Studios. Hollywood Studios is themed around old Hollywood glam! Lots of movie themed rides and decorations. The park has a very Art Deco feel to it. One of our favorite things at HS is the Toy Story ride, Midway Mania.


The Toy Story ride is one of the most popular rides and everyone wants to ride it at the same time. The key is to get to the park as soon as it opens and get a Fastpass. The Fastpass gives you a time slot to come back later and ride it without waiting in line. The ride is so popular that they run out for the entire day with in a few hours of the park opening. If you don't get a Fastpass for Toy Story you can expect to wait 1 - 2 hours in line to ride it. :( Not fun! When the park first opens you can see families running or power walking their way to the Toy Story ride,...kinda crazy!

You are inside the entire time, so the air conditioning feels really good since it's always so hot in Florida!

What is the toy story ride you may ask? It's a fun 3-D target shooting game with all the Toy Story characters in it. You ride in a little car and aim and shot at targets to get the highest score against the person sitting next to you. This vacation was the first time I beat Cody!!! I actually won the first time we played and Cody's face was priceless. He was so shocked! We love to be competitive with each other! So if you want to ride Midway Mania, plan ahead! Get to the park early and go to the ride right away. Grab a Fastpass and then hop in line. You'll probably only wait 20 - 30 minutes if you get there early!


Another thing we love to do at Disney is get our photo taken with some of the characters. This vacation we didn't do it much because we pretty much had our photos taken with everyone already. I still need to get my picture taken with Daisy! She is so adorable and the line to get your photo taken with her is always long!! I had to leave some things to do for our next Disney vacation. Below is a cute bird that we were giving pieces of bread to while eating lunch. He was so tame and sweet...


Our second favorite ride at HS is The Hollywood Tower of Terror. This ride is based off the old television show the Twilight Zone. This ride is a bit scary and I would be lying if I said I didn't get nervous when I ride it. You ride in an "elevator" and you enter the "twilight zone". The ride is free falling were you go up and down! The best part is it's different every time.

Lots of "non-Vegan" treats at Disney! HA! We did enjoy a soft pretzel and popcorn while we were there.


One of my favorite things at HS is the Muppet ride and the Muppet store. The Muppet ride is a 3-D movie that is very humorous and very fun to watch! The store is full of all kinds of cute stuffed animals and other Muppet souvenirs. Isn't the outside of the building so cool looking? Who is your favorite Muppet? I love Gonzo.


Cody made a little friend while we were eating. Not only are the birds tame, so are all the ducks. So cute! Here is a short video of Cody feeding a duck. Very funny...


They have a parade in the late afternoon which is really fun to watch. It features lots of Pixar characters and dancers. Here we are waiting for the parade to start, it was so hot and I felt like I was melting!!


I love seeing all the floats and characters! Great photo opportunities...


Here is a video of people dancing before the parade. I enjoyed watching others but there is no way in hell I would get out there! Pay attention to the old guy in the gray shirt towards the end! So funny!


If you ever go to HS I recommend the Beauty and The Beast Show! Very entertaining!

This vacation we did the Backlot Tour Ride where you go behind threw some movie sets and see how they make scenes come to life in the movies. It was neat too see. I enjoyed the movie props at the end of the ride the best. Like the Evil Queens dress from Alice in Wonderland...

I love that Disney pays attention to every small detail!

One of my favorite photos I snapped was this one with the little boy walking up to the Toy Solider from Toy Story. He wanted his autograph. Most of the kids were scared of the solider's walking around and hid from them, not this kid....
