Recipe: NOT Chicken Burritos

In a perfect world we would all be able to cook complex meals everyday! Cody and I try really hard to eat fresh vegetables with every meal and stay away from processed stuff. Even though a lot of the vegan processed food is healthy we still prefer home cooked meals. Cody has been working really late so we have been just throwing easy quick meals together. We decided to try these Meatless Chipotle Lime Crispy Fingers out and were pleasantly surprised! Here is how we ate them...

INGREDIENTS:
Rice, Crispy Fingers, Kale, Yellow Bell Pepper & Tortillas!
(Needless to say you can change this up however you want.)

I've become obsessed with Kale! I love it with just about everything.
I cut the Kale into little strips so that it would fit in the tortillas better.
The Yellow Bell Pepper was just extra produce that we had and decided to throw it into the mix.
The Crispy Fingers take about 10 minutes to bake,...yes ONLY 10 minutes!

We use a rice cooker to fix our rice which does take about 40 minutes to cook.
I just cook it early in the afternoon so that it warm for Cody went he gets home!

These were so simple and yummy! The Crispy Fingers really have a lot of flavor.
You should try them whether you are vegan or not. :) We all need quick meals sometimes.

Decor Love: Coffee & Tea Time

I really want to put a coffee bar in our downstairs family room. It's not that I'm too lazy to walk upstairs and fix coffee or tea in our kitchen. It's just that we are addicts and it would be nice to have it much closer. I think it's a fun idea and I have found some great inspiration on Pinterest. We have the perfect sized wall to setup a sideboard or cabinet with all kinds of mugs, teas and coffees! Here are some items that I like...

IKEA has many great options for me but I much rather get something vintage. We are super excited about setting this area up in our family room. It will be a few months before I really start decorating that area.
We also have to find a couch! If only money grew on trees....

Putting Up Our Christmas Tree

Over the weekend we finally found some time to put our tree up. I am also very glad that we moved in time to have Christmas at our new home. My tree is white with a mixture of vintage and new ornaments. I hope to find more vintage ornaments while I'm out thrifting this month.

I usually only decorate my tree "matchy-mathcy". I have never liked the overly cutesy ornaments in the past.
This year though we have Disney ornaments and some other cute things hiding out in our tree. I also added some cute stuffed animals under the tree this year. I am really happy with how the tree turned out this year.

Monthly Review // November 2012

November was such a crazy busy month for me. We bought a house and moved so quickly that I am still not even sure how it all happened. I have hardly unpacked anything yet. The house needs a lot of work, but I guess the rest of my winter months will go by pretty fast. Which I am not complaining about because I miss being outside! So what happened in November that made the blog....

November was a blur for me. I look forward to getting caught up on my blog again now that we have moved. The decorating is a slow process because I have to unpack all my decor, which is all buried in a tiny room. Not going to be fun getting it all out! I did however paint my living room a shade of mustard yellow! If you missed that post you can see it HERE.

Remember those 4 Simple Goals that I was suppose to accomplish by the end of the year??? I am doing okay with it. One of the goals was to workout more. I don't workout at all. I honestly feel like I haven't had time. Plus, isn't moving a workout in it's self? I am so tired all the time. I think I walk miles when I am at work anyways. I don't feel too guilty about it and wished I would of picked a different goal now. Oh well. Life is good and I just gotta go with the flow right now. Oh and I turn 31 this month. I am officially saying "I'm in my thirties now!" Thanks for all your comments and blog love.

Chloe goes Vegan

Actually we feed all our pets IAMS, but Chloe loves veggies! Chloe's favorite treat is carrots. We decided to see if she would eat Kale also. Here is a cute video of her trying it...
